Courgette, pepper, potatoes, asparagus and halloumi. Flavoured with a little thyme, garlic and cooked hot and fast over wood and charcoal. Finished with a slosh of balsamic dressing.

Sourdough Focaccia. Making both sourdough bread Sourdough Focaccia. 

Making both sourdough bread and focaccia quickly becomes habit. Eventually, it makes sense to combine the two. Really happy with how this turned out, simply used my usual SD bread ratios, sans fancy flours, spread out on a baking tray, topped with tomatoes and rosemary and doused it in olive oil. Easier than making a loaf.

I’ve had a wonderfully relaxing time off. Much t I’ve had a wonderfully relaxing time off. Much time spent in the pool and also breaking in the new Kamado grill, through sun and showers.

Veg is so underrated on the bbq. Here’s last night’s dinner, a smoke-roast whole cauliflower with hassleback potatoes, asparagus, lemon, butter, garlic, cumin and herbs collected from the garden.

Leek and Sourdough Panade. This is one of my favo Leek and Sourdough Panade.

This is one of my favourite bakes when needing to use up a sizeable chunk of stale bread. Layers of leek/onion/garlic, cubed bread that’s been seasoned, cheese and shredded cabbage get doused in veg stock and set in the oven. I like to add caraway too, addicted to its pairing with both leek and cabbage, but that’s the limit to the extravagance; it’s a humble dish at its core, super satisfying, and best kept simple.

With all the extra time spent at home, it’s been With all the extra time spent at home, it’s been the perfect excuse to get immersed in the sourdough lifestyle. I’ve been living it for the past couple of weeks now: watching video after video, reading book after book and taking in the many different techniques and timings. Here’s my second loaf, a big improvement on the first, I think, and already becoming a little less an ordeal. It’s quite an experience building a starter from scratch, just flour and water and seeing it become active and able to give rise to your bread. Incredibly rewarding and you can’t beat sourdough for its texture and flavour. It’s tricky getting a hold of flour at the moment, so the next few loaves will likely be cut with odds and ends of different flours: malted, wholemeal, spelt. I can’t think of a better or tastier way to use them.

With a decent store of kimchi in the fridge, a lot of time is spent thinking up different ways of using it. Pancakes are a common outlet (Chijimi), but, although nice, they are a little boring and lacking in texture.

A toad however, with it’s fat, juicy bangers—thick chunks of bacon 🥓 would also be a welcomed addition for another day—adds a much needed variance. The tangy sauce, concocted on the fly—and in need of writing down measurements next time—is a sour/sweet punch to the dour/grey morning. Topped with some sesame seeds, some Chili flakes and this is a complete joy to eat...and perhaps even better is to return back to bed, afterwards.

Found a wonderful veg stall in Brecon’s indoor market that stocks Napa, Daikon, Asian Pears - amongst plenty of other great produce. This should be a lot more authentic than my first attempt (lovely though it was). Can’t wait to taste, once funky and fermented.

Had plenty of time to ponder a different tact in making this veg stew with two cancelled trains home from work. Roots first, not the alliums, the mirepoix. The reverse may lead to insiped results with humble veg. High heat and serious colour needs to be achieved, I’m now convinced - the same way we brown meat, develop a fond - before drawing it to a slower, gentler cooking. No stock is needed here, water’s enough; I bet it’ll be even better tomorrow.

Crank the oven full-whack and break out any cheese and toppings that appeal to you at the time. Mine invariably has some sausage or chorizo and a nice drizzle of balsamic before setting on the furiously hot stone for maximum crispness.

Quiche can be a little involved and fiddly; exactly the type of cooking I want to do when hoping to take my mind off of life’s stresses. The best, in my opinion, aren’t dainty and overly reliant on the custard filling, but rustic, hearty and chock-full of tasty veg. Underneath, thinly sliced seasoned potatoes will welcome the aromats and escaped juices. A fashioned cartouche and foil lid keeps the goodness inside when the contents prove too large for the shallow braiser. Time and a low flame are all that’s needed. They will coax the meat to the most giving tenderness. Inside, the heady melange of rosemary, thyme, bay, marjoram, sage, tarragon, garlic will have made their imprint—to be savoured when you close your eyes and let them through; like listening past the core riff of a favourite song, to the rhythm section bringing it all together.
